  • Dinner tonight, leftovers for tomorrow. Sheet pan meal for the win! 😊 This was so simple, it honestly doesn't even qualify as a recipe. I cranked the oven to 425 and quick-marinated some chicken breasts in olive oil, soy sauce, lemon juice (maybe 2 tablespoons of each?) and a bit of dijon (about a teaspoon). I chopped up 2 sweet potatoes and a big bunch of broccoli and tossed them separately with olive oil, salt and pepper. I baked the potatoes and chicken on the parchment-lined pan first for about 10 min, then turned the chicken & potatoes over and added the broccoli and some crimini mushrooms (yep, tossed them with a bit of oil & seasoning too.) Once everything was on the pan it took about another 15 min more til the veggies were browned and the chicken was done. I squeezed annoying lemon on the chicken one it was done.   • November blues. Frozen wild blueberries, thawed out and mixed with Greek yogurt and a splash of maple syrup. I love to pile granola, hemp seeds, pumpkin seeds and walnuts on top. You could say it's all about the antioxidants, protein, fibre and healthy fats, but truly I just love the colour, crunch and taste! 😋 We eat with our senses first, and we typically eat what appeals to us.   • Some of my favourite colours, starting off breakfast today. I'm still eating veggies from the garden! A stalk of vibrant rainbow 🌈 chard, a small purple onion, and some bright green kale. I love the way these colours look together! After a quick sauté in the pan, I cracked two eggs on top and finished with crumbled feta. Yum! We really do eat with our eyes first.
